Description
Pecorino Romano is a hard, cooked cheese, produced with fresh whole sheep’s milk, coming exclusively from the farms of the production area, possibly inoculated with natural cultures of native milk ferments of the production area and coagulated with lamb rennet in paste coming exclusively from animals reared in the same area of production. It has a thin crust of light ivory or natural straw yellow, sometimes cappata with special protective food for neutral or black color. The cheese paste is compact or slightly glazed and its color can vary from white to more or less intense straw, in relation to the technical conditions of production. The taste of the cheese is aromatic, slightly spicy and savory in the table cheese, intense spicy in the grated forage.
